Oven Baked Camembert Cheese

For me, one of the nicest additions to a picnic style meal or an informal meal with cheeses, fruit and a selection of crusty country style breads has to be camembert cheese. I’m talking of course about Camembert that has been warmed to an almost aphrodisiacal, oozing consistency that beckons even the most hardened of palates to come and taste of its goodness….who can resist?

This is how I do mine:

1 round Camembert – packaging removed and at room temperature

a few sprigs of fresh thyme

A glug of white wine or verjuice

A drizzle of Extra Virgin Olive Oil

A grinding of freshly ground black Pepper

Heat the oven to 180deg Celcius

Place the cheese into a small ovenproof dish the exact same size as the cheese. Using your thumb or the back of a spoon push an indentation into the top of cheese, slightly breaking the rind. Sprinkle the thyme leaves over the cheese, pour over one glug of white wine or verjuice and a drizzle of olive oil. Grind over some black pepper. Place on a baking tray into the hot oven and bake for about 5-10 minutes until the cheese is soft and oozy.

Place on a platter with chunks of crusty country bread and water biscuits or similar. To enjoy dunk your chunk of bread into the cheese and pull out the oozy delicious tasting cheesy bits to eat with the bread. Yummy!!!
